The Best Bulgogi Bowls


4 servings Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes

Delicious homemade, healthy, mock Korean BBQ in just 15 minutes!


INGREDIENTS: 2 TBSP brown sugar, packed or any sweetener of choice (maple syrup works well!) 1/4 cup reduced sodium soy sauce 2 teaspoons sesame oil 1/2 teaspoon crushed red-pepper flakes, or more to taste 1/4 teaspoon ground ginger 1 tablespoon vegetable oil 3 cloves garlic, minced 1 pound ground beef 2 green onions, thinly sliced

4 servings brown rice or any grain, cooked or lettuce for low carb

1 cup sliced cucumber, radishes, carrots, edamame, avocado, anything you like for toppings

2 TBSP Sesame seeds, crunchy onion, crunchy garlic, crunchy seaweed, furikaki (optional)

Top with quick pickled red onions (optional)

Lastly, spicy mayo! (optional too)


DIRECTIONS:

1. In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and ginger.

2. Heat vegetable oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef (crumbled) and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.

3. Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.

4. Serve immediately. To serve: Add 1 serving rice or grain to bowl. Top with meat, veggies, edamame, pickled onions, spicy mayo and any toppings you want.


So good!!! Easily, better than takeout and way cheaper!


To store: Keep ingredients separate and keep refrigerated. Keeps for 3-5 days. Great for weekly meat prep!
